I choose the 2 Sisters Cooking School because they were a five minute walk from the hotel and they had tons of five star reviews. I did not regret my decision!
I was collected on foot at the back gate of our hotel by Saloni who guided me to the cooking space after a ~5 minute walk. There I was introduced to Niru who went through the menu options and took me along to two local vendors to pick up fresh cows milk and a variety of veggies needed to make my chosen dishes.
Egg Roti – We made whole wheat roti from scratch, very similar to other flatbreads but no leavening. Cook in the pan, flipping a couple of times until light brown spotting, then over an open flame until puffy and blackened in spots. Made an omelet with choice of ingredients, then top with cooked roti, cover off heat and let meld. For serving, roll up.
Chicken Momos – so fun! Made the dough then portioned it out – didn’t weigh but about the size of a thick quarter, probably 15g each. Lots of filling allowed and learned to make three folds: half moon (for chicken), round (for buffalo) and fishtail braid (for fish). I appreciated the chance to fold a bunch of these as I feel like I got the hang of each fold by the end. Also made a dipping sauce “momo achar” from scratch.
Semolina pudding – semolina, black cardamom, bay leaf, hot milk, topped with coconut flakes.
After the class, I was emailed all the recipes in an easy to read fashion, can’t wait to try some of the other recipes at home.
