easy hummus recipe

I love hummus. I do not, however, love reeking of garlic after partaking in said hummus. So, I am always on the lookout for a good recipe I can make myself, thereby controlling the amount of garlic involved. Here’s one I made this afternoon by combining a few online recipes.

Easy Black Olive Hummus

1 1/2 cups canned chickpeas (about 15oz), drained, liquid reserved
12 black olives (jumbo)
1/2 tsp minced garlic
1 Tbsp good olive oil
1/4 tsp salt
fresh cracked pepper to taste

Combine all ingredients in a food processor and pulse a few times to combine. Slowly add the reserved liquid from the canned chickpeas until reaching the desired consistency. Serve with toasted pita bread and sliced black olives. It doesn’t get much easier than this… delicious!
